VEGAN & GF BUCKWHEAT AND BANANA WAFFLES
So this is now the last (hopefully) weekend in Austria with all restaurants closed and us pretending to be home brunch king and queens. Therefore, I wanted to try out another delicious breakfast at home namely waffles which are actually both gluten-free and vegan as the main ingredients are actually buckwheat flour and banana.
Again, my boyfriend created a beautiful video of the recipe which you can see on my Instagram account. In order to let you also read the recipe, I wrote everything down below. I hope you enjoy the waffles and I would love to hear how you liked them!
One fun fact maybe about the maple syrup: since I was living in Canada for a while, I am crazy about maple syrup and throw it over literally anything. When I came back home I brought I think 5L of it in my suitcase (and it did not leak luckily haha). I just love the very distinct sweet taste of it :)
RECIPE FOR BUCKWHEAT AND BANANA WAFFLES
100g buckwheat flour
50g blended almonds
50g oats (either blended or rolled)
1 tablespoon flaxseed flour
2 tablespoon baking powder
1 ripe banana
50-70ml maple syrup
2 tablespoon cashew butter
350ml oat milk (or any other plant based milk)
Bit of coconut oil for baking the waffles
Optional: berries (I used raspberries)
Optional: apple sauce
Optional: coconut flour
Mix the buckwheat flour with either the whole or blended oats
Blend the almonds and add them to the mixture
Add the flaxseed flour, a pinch of salt, the baking powder and the vanilla powder
Mix in the cashew butter
Cut one ripe banana, squash it with a fork and add it to the mixture
Add the maple syrup, oat milk and mix firmly
Heat up your waffle iron, add coconut oil and wait until it is hot enough for baking the waffles
Bake the waffles
Garnish the waffles, I used coconut flour, berries, apple sauce, cashew sauce with vanilla and of course maple syrup
